Thank you for the info on eggplants, I am going to try the stew and will let you know...I am always looking for better ways to prepare the freshest ingredients that are in season. I like the fact that they dont have to be salted, sometimes I feel like all the salt does not get washed off and the dish will be too salty in the end. Thank you again, I love your articles!
